Eddie and Bettye Cass used
their South Florida experience to good advantage when they introduced
our oyster capital to such shockers as shrimp-scallop bisque and fresh
dolphin Pontchartrain with artichoke hearts, shrimp and crisp almonds
swimming in a creamy scampi sauce. Anything Eddie does is all
right with me. - Robert Tolf

At the Magnolia Grill,
chef-owner Eddie Cass frequently leaves the kitchen to chat with
customers and explain his half-dozen or more daily specials. The
night we were there, he offered delicious "Pontchartrain", a
dish of local fish, and "Provencal", a dish of sautéed shrimp
and scallops. Most locals consider the Gulf seafood here the best in
town. - Bob Knotts

". . . In his own place
at last, chef Cass is doing a lot of good things.
. . .order anything that strikes your fancy; they're all proof positive
of the fun that chef Cass is having in his new home . . ." -
